Mhairi & Stuart Craig
We are Stuart & Mhairi Craig, originally from Scotland. Stuart has a doctorate in biochemistry from Heriot-Watt University, Edinburgh, is a scientist at DuPont Nutrition & Health and has published research on dietary fiber and micronutrients. Mhairi is a registered nurse with a BA in Nursing Studies from Queen Margaret College, Edinburgh and currently works at The Endoscopy Center of Delaware. Double Spiral Chocolate began in New York in the summer of 2014 as a shared hobby around our keen interest in the diet-health relationship. We moved to Ardentown, DE in 2015, constructed a commercial kitchen above our garage, and formed the company in 2016. Our chocolate can be found at local retail locations, farmer’s markets, craft fairs, and pairings around Wilmington. We have also been invited by various groups to give presentations on bean-to-bar chocolate and have given demonstrations at Maker Festivals.

What inspired you to make this project?
To showcase a sustainably produced dark chocolate that balances taste and nutrition while demonstrating the flavor nuances of single origin cacao.
